Banana Nut Bread

This banana bread won second place in baking contest.

  • 1½ cups self-rising flour (note: if you use all purpose, add in 2¼ teaspoons baking powder, ¾ teaspoons salt)
  • 1 teaspoon cinnamon
  • dash nutmeg
  • ¼ cup white sugar
  • ½ cup brown sugar
  • 3 very ripe bananas
  • 2 eggs
  • 1 tablespoon vanilla
  • ½ cup oil
  • 1 cup nuts, chopped coarsely (pecans or walnuts work well)
  1. Mix the dry ingredients together.
  2. Mash bananas.
  3. Add in eggs, vanilla, bananas and oil and stir, but don't overmix.
  4. Back at 350 fro 50-60 minutes.
I cut the sugar by 25%. If you have a sweeter tooth, you can add in another ¼ cup sugar. I added in nutmeg and cinnamon, which you add or delete, depending upon your taste.
