People say Happy New Year. I’m wishing you a Happy Heart.

The happiness I wish for everyone this new year is a happy heart, no matter what comes your way. Happy hearts make the world a better place, help you live longer, and help those around you live longer.

Happy hearts speak up when it’s important to do so as they defend the weak with strength, but remain silent when that’s the wisest course to take. Happy hearts forgive, forget, and move past the barbed wire.

Most of all, happy hearts thrive on the happy hearts of others, wishing everyone in their path the best that life and God can bring their way.

In my personal experience, it’s the hardest thing to attain, but it’s the only thing we have control of and it’s our most powerful weapon against darkness.

A happy heart is a practice and it starts by trying to understand instead of criticize, by choosing to be a salve and not an arrow.

A happy heart does not put people in boxes, Democrat, Republican, Black, White, Brown, Poor, Rich, American, Christian, Muslim, Jew, Hindu, Divorced, Gay, Conservative, Progressive, Old, Young, Senior, Millennial, Asian, Mentally Ill, Unemployed, Broke, Addict, Winner, Loser, Immigrant.

A sad heart uses these descriptions to place people into holes as if they are a child’s block, but we are far more complicated than the census check off lists.

A happy heart will seek to love her enemies.

You know the enemies, the ones the Huffington Post or the Drudge Report tells you are your enemies.

A happy heart is a little smarter than a news bite.

In a less serious side of me, Spinach Tiger is now seven, old enough to drink champagne spiked with cognac. I toast to this little blog with champagne cocktails shots. I thought about giving you a long list of my best posts, etc., but that makes it all about me and not you.

All I want to do is toast you, say thank you, and celebrate together. Here’s to another seven years.

Champagne Cocktail with Cognac

 The Cherry Cognac Champagne Cocktail

Just dip a sugar cube into bitters, add a Luxardo cherry and an orange peel to a glass. Splash in some cognac. Add your favorite bubbly. Add sugar cube. Luxardo cherries are expensive, but worth it and nothing like those bright red ones on top of sundaes. The spiced cherry bitters by Woodford Reserve is because I love cherries, but you can use angostura bitters.

Forgive the cute little glasses. My champagne glasses broke this week. Flutes do keep those bubbles, but these are like little champagne shots, something out of the ordinary.

Ingredients

  • Luxardo Maraschino Cherries
  • Champagne or Sparkling Wine
  • Orange Peel
  • Sugar Cube
  • Angostura bitters or Woodford Reserve spiced cherry bitters
  • Cognac

Instructions

  • I used small glasses to make champagne shots. However, a flute will keep your bubbles.
  • Put cherry and orange peel into glass.
  • Splash with cognac approximatley 1 to 4 champagne amount.
  • Dip sugar cube into bitters and place in glass.
  • Top with champagne.
